What you need:
- 2 to 3 chicken breasts
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 cup jarred pesto
- 1/4 cup salted butter, sliced
- Juice of 1/2 lemon
- 1 lb. rotini
- 1/2 cup shredded parmesan
- 2 cups shredded mozzarella
- 1/4 tsp. dried basil
Directions:
- Add chicken to the slow cooker and sprinkle with salt and pepper.
- Spread pesto on top and then pour lemon juice over the top.
- Then top with butter.
- Cover and cook on LOW for 5 to 6 hours.
- Near the end of cooking, cook pasta according to package directions and drain.
- Shred chicken then add pasta, and parmesan and stir well.
- Top everything in the crockpot with mozzarella and cook for 15 more minutes.
- Garnish with dried basil.
