Slow Cooker Pesto Mozzarella Chicken Pasta

What you need:

  • 2 to 3 chicken breasts
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup jarred pesto
  • 1/4 cup salted butter, sliced
  • Juice of 1/2 lemon
  • 1 lb. rotini
  • 1/2 cup shredded parmesan
  • 2 cups shredded mozzarella
  • 1/4 tsp. dried basil

Directions:

  1. Add chicken to the slow cooker and sprinkle with salt and pepper.
  2. Spread pesto on top and then pour lemon juice over the top.
  3. Then top with butter.
  4. Cover and cook on LOW for 5 to 6 hours.
  5. Near the end of cooking, cook pasta according to package directions and drain.
  6. Shred chicken then add pasta, and parmesan and stir well.
  7. Top everything in the crockpot with mozzarella and cook for 15 more minutes.
  8. Garnish with dried basil.
