This is one of my favorites and it hails from my childhood. My grandma and great aunts made these around the holidays, and there were never any left over, which is always the sign of a good recipe. This one is a keeper!
The amount of roll ups you get depends on how thin you spread the cream cheese. I like a thick layer, so I always end up with fewer appetizers.
48 to 64 bite size appetizers:
12 to 16 slices of deli ham (cut a medium thickness)
8 oz. cream cheese, softened to room temperature
12 to 16 smallish pickles (I use Milwaukee’s kosher baby dills)
Lay ham slices out on a large cutting board. Evenly spread approximately 1 Tablespoon of cream cheese on each ham slice so it reaches the edges. Place a pickle at one end of the cream cheese ham slice and roll it up. Repeat with the rest of the ham slices and pickles. Once you have 12 to 16 rolls, place them on a platter and refrigerate for 2 hours. Once the two hours is up, remove the rolls from the refrigerator. Using a very sharp knife, cut each roll into 4 pieces. Place roll ups in a airtight container in your refrigerator until ready to serve.
For a pretty presentation: Arrange roll-ups on a serving platter with a toothpick in each.
