
INGREDIENTS
- 1/2 cup extra virgin olive oil
- 1/3 cup apple cider vinegar
- 1/2 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- 1 head broccoli, chopped into florets
- 1/2 head cauliflower, chopped into florets
- 1 cup ham, cubed
- 1/2 cup salami, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 8 oz mozzarella cheese, cubed
- Kosher salt and freshly ground black pepper, as needed
- Parmesan, freshly grated, as needed
PREPARATION
- In a large bowl, whisk together the olive oil, vinegar, garlic powder, thyme, oregano, rosemary, and salt and pepper until incorporated.
- Add the broccoli, cauliflower, ham, salami, tomatoes, olives, and mozzarella, and toss to coat.
- Chill until ready to serve and garnish with parmesan cheese, if desired. Enjoy!
