Breakfast Casserole with Bacon

This breakfast casserole with bacon is loaded with eggs, bacon and cheese and is topped with tomatoes, avocado and herbs.

Ingredients

  • Casserole:
  • 1 pound of bacon cooked and crumbled, divided use
  • 1 16-ounce bag of Green Giantâ„¢ Cauliflower Veggie Tots
  • 12 eggs
  • 2 cups of cheddar cheese divided use
  • 1/3 cup milk
  • salt and pepper to taste
  • cooking spray
  • Topping:
  • 3 tomatoes seeded and diced
  • 1 avocado pitted, peeled and diced
  • 1/3 cup sliced green onions

Instructions

  1. Preheat the oven to 375 degrees. Coat a 9Ă—13 inch pan with cooking spray.
  2. Place the Veggie Tots in a single layer on the bottom of the pan.
  3. In a large bowl whisk together the eggs and milk until thoroughly combined.
  4. Stir in 3/4 of the bacon and 1 cup of the cheese.
  5. Add salt and pepper to taste.
  6. Pour the egg mixture over the veggie tots.
  7. Sprinkle the remaining bacon and cheese over the top of the egg mixture.
  8. Bake for 45 minutes or until center is set.
  9. Place the tomatoes, avocado and green onions in a bowl; stir to combine.
  10. Spoon the tomato mixture over the top of the casserole and serve.
