I’m always on the hunt for new slow cooker recipes! Soups, sides, main dishes, desserts, I’m here for it all. Today’s recipe is a slow cooker side with corn, diced ham, and a creamy, cheesy sauce that brings everything together. This is comfort food at its finest and makes for one amazing accompaniment for any meal.
Seasoned with onions, garlic, and parsley, this dish is full of flavor. Add in cream cheese, a heaping helping of Velveeta, and seared ham, and this is corn like you’ve never had before!
Just look at all that cheesy goodness! This side is always a hit at pot lucks, and it’s easy to see why. I might have to make a double batch for my next get-together!
As with most slow cooker recipes, this one is simple and only takes a few minutes to throw together.

Ingredients
- 2 cups diced ham
- 1 tablespoon olive oil
- 36 oz. frozen corn (3-12 oz. bags)
- 1 sweet onion, diced
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon dried parsley
- 1 pound Velveeta cheese
- 8 oz. cream cheese
Preparation
- Add olive oil to a large skillet over medium heat. Brown the ham, searing it slightly before adding it to the slow cooker.
- Next, pour in frozen corn, onion, pepper, garlic powder, and parsley to the slow cooker. Stir to combine.
- Cut Velveeta and cream cheese into squares and place on top of the corn mixture. Set the slow cooker to high and cook for 2 hours, stirring about halfway through.
- Serve up hot and enjoy!
