HEALTHY TACO STUFFED TOMATOES

Something to try when trying to eat healthy, while craving all those exciting taco flavors. Ground beef, tomatoes, lettuce, taco sauce and taco seasoning combine to create this amazing recipe, perfect for summer time.

When the nights are still hot and fresh tomatoes are abundant, Taco Stuffed Tomatoes are a terrific, no-fuss supper option to herald the end-of-summer. This quick low-carb meal uses ground beef, spicy taco seasoning, and your favorite toppings and salsas, and comes together  in one skillet, in about half an hour

This is the first dish I turn to when I have a surplus of tomatoes. It’s similar to stuffed peppers, except the tomatoes stay cold and fresh instead of being baked. Each one is filled with seasoned ground beef, browned onions, lettuce, shredded cheese and the insides of the hollowed-out tomatoes for a quick and inexpensive meal that everyone enjoys. This American cuisine can be served as an appetizer, dinner or snacks, depending on how you love it.

Ingredients

4 tomatoes

1 lb. ground beef

1 packet Taco Seasoning

Shredded Lettuce

Onions diced

Fiesta Mexican blend Shredded Cheese

Sour Cream

Taco sauce for dipping

 

How to prepare

Step 1:

Cut an “X” shape into the top of each tomato and pull them apart gently. Then brown your hamburger, and add in the taco seasoning.

Step 2:

Fill the bottom of each tomato with lettuce, then the taco meat, onion, and shredded cheese. Top with sour cream. Serve!

Tips

  • Depending on the size and shape of the tomatoes you choose, you may need to scale up the recipe and create a second batch to fit them. Fortunately, this is simple to accomplish, and leftovers are always appreciated.

The filling may be prepared ahead of time and reheated in the microwave or in a pan. stuff the tomatoes just before you plan to dine.
