These toasts can be made with brioche bread, baguette bread, whole wheat bread, sourdough bread. The ideal is to make them the night before so that they are soft and creamy.

If you have intolerances or allergies to cow’s milk, you can use coconut, oat, or almond milk.

Ingredients:
3 tbsp raw sugar or 3 sachets stevia.
1 1/4 teaspoons ground cinnamon, divided
16 slices 100% whole wheat bread
1 can (12 ounces) evaporated nonfat milk
1 cup 2% milk
6 large eggs
1/4 cup unsweetened maple syrup
1 tablespoon pure vanilla extract
Zest from 1 small lemon or 1/2 orange
1/4 teaspoon kosher salt
To serve:
Fresh berries, strawberries, blueberries
Greek yogurt
Peanut or almond butter
Maple syrup
Preparation:
Butter a 9 × 13-inch casserole dish. In a small bowl, mix sugar or stevia and 1 teaspoon cinnamon.
In a large bowl, stir together evaporated milk, milk, eggs, unsweetened maple syrup, vanilla, lemon or orange zest, salt, and the remaining 1/4 teaspoon cinnamon.
Arrange the bread slices in the pan, pour in the liquid mixture. Sprinkle with cinnamon mixture, and cover with foil. Let stand overnight.
Remove pan 1 hour before and bake at 375F for 20 minutes with foil. Then uncover and continue baking for 10 minutes more. Remove from oven and let stand for a few minutes. Cut into squares and serve hot, with your favorite toppings
