These Chicken Bacon Ranch Quesadillas are SO GOOD and taste just like the one’s from Chili’s but better! Chopped rotisserie chicken and sharp cheddar cheese get melted together with crispy bacon, fresh scallions, and creamy ranch dressing. The outside tortillas are grilled until crisp and toasty and the inside is oozing with cheesy goodness! You’re going to love this recipe for an easy lunch or appetizer!
INGREDIENTS :
4 (8”) flour tortillas
1/4 cup ranch dressing
1 cup cooked rotisserie chicken cut in small bite-size pieces
4 slices crispy cooked bacon chopped
1 1/3 cup Colby jack shredded
2 tablespoons butter
INSTRUCTIONS :
Step 1: Add about 2 tbsp ranch dressing over 2 pieces of tortillas. Spread and top individually with half of the chicken, half bacon, and half cheese. Top them with a tortilla.
Step 2: In a large skillet, melt 1 tbsp butter over medium heat.
Step 3: Place 1 quesadilla and cook until the bottom has lightly browned.
Step 4: Flip and continue to cook the other side until lightly browned.
Step 5: Add another tbsp of butter into the skillet and cook the remaining quesadilla.
Step 6: Serve immediately. Enjoy!
